  In this presentation, I will talk about fermented foods. Fermented foods are foods whose taste and nutritional value are enhanced by the action of microorganisms. Fermented foods that are familiar to us include Japanese sake, wine, beer, miso, soy sauce, doubanjiang, gochujang, vinegar, bran pickles, kimchi, natto, dried sausage, raw ham, kusaya, oolong tea, black tea, yogurt, kudzu mochi, and nata de coco. There is something like that. Which fermented food do you like? My favorite fermented food is amazake. Amazake is not only delicious, but also has various health and beauty effects. From now on, I will talk about the four effects of amazake.

  The first is the effect of helping the diet. Lipase and glucose contained in amazake are on the side of the diet. Lipase is an enzyme contained in amazake and has the function of breaking down fat. Glucose has the function of helping digestion and raising the blood sugar level. Then, the center of fullness is stimulated, and you can get a feeling of fullness with a small amount. The second is the skin-beautifying effect. Amazake is rich in B vitamins such as vitamin B₂, vitamin B₆, and nisin. The B vitamins have the effect of helping protein metabolism. Many of the components that make up the skin and mucous membranes are composed of proteins. Therefore, by activating protein metabolism, it is possible to remove skin waste products and make healthy skin with pull-pull. The third is the effect of preventing and relieving constipation. Amazake is rich in dietary fiber and oligosaccharides. These ingredients work to increase the number of good bacteria in the intestines, so they improve the intestinal environment. Amazake also contains insoluble dietary fiber, which stimulates the intestines and promotes defecation. Therefore, it is very effective in preventing and relieving constipation. The fourth is the effect of lowering blood pressure. Amazake contains an amino acid called GABA. GABA is known to relieve stress and relax, but it also lowers blood pressure. Many Japanese have high blood pressure. High blood pressure causes diseases such as arteriosclerosis and stroke. So lowering blood pressure is a very valid effect.
